Mezcal Derrumbes Tamaulipas is a rare mezcal from the far northeast of the Denomination of Origin, made by Maestro Mezcalero Cuauhtémoc Jacques from endemic Amole agaves (Funkiana and Univittata) cooked with larger Agave Americana.
Produced traditionally with a horno de tierra, natural wild-yeast fermentation in wooden vats, and small-scale copper pot still distillation. The profile is unlike any other mezcal — fresh and mineral, balanced by black forest fruit.
Tasting Notes
Nose: Blood orange citrus, mineral notes, black cherry, bitter dark chocolate; herbal mustard greens
Palate: Dry and crisp, balanced by blackberry and grape; mineral freshness builds
Finish: Fruit fading into fresh herbal tones and bitter dark chocolate
